CHILAQUILES

INGREDIENTS:

- 1 PKG. of white corn tortillas
- 6 eggs beaten
- 2 TBS of  Extra Virgin Olive Oil
- 1 TBS of coarse black pepper
- 2 TBS of powder chicken bouillon

PREPARATION:

1.- On a large skillet heat for 2 minutes Extra Virgin Olive Oil, meantime cut into 1/2 inch squares the tortillas with a sharp knife. Add cut up tortillas to heated oil and sautee for 3 minutes, sprinkle pepper and bouillon and keep cooking, mixing constantly as if you were stir frying.

2.- Add beated eggs and cook until completely cooked.

Serve with a dollop of sour cream on top and grated cheese and sliced avocado. If you'd like to add spice you can add any salsa you like!
