Cactus Leaf Breakfast.

Cactus Leaf a.k.a. Nopal or prickly pear is one of the food staples in Mexico. I grew up eating it, cooked not raw. But it is very easy to cook and incorporate into salads, breakfast and dinner. Not to mention it can lower your blood sugar, lowers cholesterol and lately it has been known for lowering cancer cells.

This is what it looks like.

Here is an easy to make recipe for breakfast that will keep you energized and satisfied.

INGREDIENTS:*
(serves 2)

2 Cactus Leafs (Nopales) without spikes. You can buy them clean at your local supermarket. Cut into 1/4 inch squares.
1/3 of a white onion cut into 1/4 inch squares.
1/4 of a teaspoon of minced garlic.
1 teaspoon of Olive Oil.
3 eggs beaten.

PREPARATION:

In a medium sized skillet heat olive oil for about 3 minutes.

Add minced garlic, onions, cactus leaf's and sautee.

When onions are tender and cactus is a darker shade of green add beaten eggs and mix.

Cook well combining ingredients.

Serve hot and enjoy!
*If you up for spicy you may add some diced Serrano Chiles to the saute... It gives the meal a little kick! I don't use salt but you can certainly add to taste.
