Curried Chicken Pomegranate.

It's Pomegranate season! our kids love love love Pomegranate. I include it in our meals like on this recipe or they just eat it fresh, after I peel and serve the seeds in a bowl. Yummy!

INGREDIENTS

1 cup plain fat-free yogurt
1 TSP curry powder
1/2 TSP ground ginger
1 cup pomegranate seeds
2 large cloves of garlics, finely chopped
4 skinless boneless chicken breast halves (about 1 lb)




PREPARATION

1.- Heat oven to 350 degrees. Spray square baking dish with nonstick cooking spray.

2.- Mix yogurt, curry powder, ginger, pomegranate seeds and garlic in medium bowl.

3.- Dip chicken in yogurt mixture and place in baking dish. Spread remaining yogurt mixture over chicken. Bake 35 to 45 minutes or until juices run clear.

This dish can be enjoyed with a side of steamed brown rice or wild rice. Also excellent with yams or baked potato.
