For the past 10 years, every Friday after Thanksgiving my father in law has been preparing delicious "Tortas" -it's basically a sandwich- they are made with 'bolillo' bread. You can find 'bolillo' at your local Hispanic bakery or Hispanic market.
INGREDIENTS*
Bolillo or Teleras
Leftover Turkey
1 Medium sized can of Chipotle Peppers
1 Can of 'Media Crema' from Nestle
Mozzarella cheese slices
1 Small yellow onion chopped
PREPARATION
1.- Shred the turkey and set aside. Place a large skillet on medium heat sprayed with cooking spray or you can also use extra virgin olive oil. Saute turkey and onion.
2.- Place the Chipotle peppers and 'Media Crema' -cream- in a blender and blend. Add the mixture to your turkey. Set aside.
3.- Place another skillet on medium heat and butter the inside of the bolillo. Place buttered side onto the skillet and flip over after 3 minutes.
Now you are ready to assemble:
4.- Serve the turkey onto the 'bolillo' and top it with a slice of mozzarella and top it off with the other side of the bolillo. You may include your other sides depending on your taste.

**Chipotle peppers are on the hot side, you can use as much from the can as you desire. Most ingredients are available at your Hispanic food aisle.
