Homemade Carrot Soup {recipe}



This is the perfect recipe for any season of the year, not to mention all the vitamins and minerals that carrots have among them are Vitamin A, Vitamin B1, B2, B3, Vitamin C, Vitamin E as well as Calcium, Iron, Magnesium and Potassium. 

Here is an easy and quick way to enjoy a delicious homemade carrot soup or creme, I like that it is water based. 

INGREDIENTS:

4 Large Carrots
2 Cups of water
1/4 Of an onion 
1 Garlic clove
1 Tbsp of butter or margarine
Salt and ground black pepper to taste


COOKING INSTRUCTIONS:

      Wash, peel and chop carrots into 1" coins.



In a medium sized sauce pan add water and carrots and boil in medium-high heat.


Finely chop onion and garlic, set aside. In a frying pan melt butter or margarine, when almost completely melted add onion and garlic to caramelize them. 


When the carrots are soft enough to insert a fork in them easily, blend them with the caramelized onions and garlic adding the water slowly. Add salt and ground black pepper to taste.
