Chicken Fajitas

INGREDIENTS:

2 Boneless/skinless chicken breasts
1 Medium size green bell pepper
1 Medium size red bell pepper
1 Medium size onion
1 Tsp of minced garlic
1/2 Tsp of garlic salt
1/2 Tsp of crushed black pepper
1/4 Tsp of ground cumin
1/4 Tsp of ground curry
1 Tbsp of soy sauce
1 Handful of chopped cilantro
2 Tbsp of oil or use cooking spray


PREPARATION:

1.- Chop all the ingredients lengthwise, as for chicken cut in half then cut into long strips and cut those strips in half. Place a large skillet on medium heat with oil.

2.- Add garlic, onion, chicken, peppers to the skillet and brown for about 3 minutes with cumin, curry, garlic salt.

3.- Add soy sauce little by little and let cook for 5 minutes covered. Add cilantro and mix all ingredients again and set to low heat for 3 - 5 minutes.

Enjoy with a side of refried beans and Mexican style rice.

  1. Family loved it! I didn't have any cumin, however I did add a half a can of Mexican style diced tomatoes which gave it a wonderful sweet taste that was amazing. You can usually find these different styled diced tomatoes in the canned tomato section of your grocery store!
