Chicken Stir Fry

INGREDIENTS:

2 Boneless/skinless chicken breasts
1 Medium sized red bell pepper
1 Medium sized yellow bell pepper
1 Medium sized green bell pepper
2 Carrots
2 Celery sticks
2 Italian Zucchini's
2 Tbsp oil
1 Tsp freshly grated ginger root
1/4 Cup soy sauce
1/2 Tsp Five Spice powder
1 Tbsp of minced garlic
1 Medium sized onion

PREPARATION:

1.- Cut chicken breasts in half and then into bite size pieces. Julienne cut all the rest of the ingredients except for celery, which will be chopped into diagonals. Put a large skillet on medium-high heat with oil -make sure you have a lid for this skillet.

2.- Brown chicken with chopped onion, garlic, ginger root, celery and add the rest of the vegetables gradually mixing constantly.

3.- Add five spice powder and soy sauce gradually mixing to make sure all the vegetables and chicken are evenly "coated". Cover for 5 minutes and set to low heat.

Enjoy with a side of brown or white steamed rice and a garden salad. It is also perfect to be served in a bowl on top of the rice or noodles.

I lived in El Centro for 13 years so you know we went to San Diego ever chance we had and enjoyed it ever so much. This stir fry looks amazing and I think I have both five spice powder and soy sauce and chicken so I just to pick up the veggies. I am Pinning!!

    1. Hi Evelyn, thanks for stopping by. It is an easy and delicious recipe I tried out once when I ran out of ideas on cooking the same ol' meals! :D Thanks for the follow. We did live in San Diego until last Spring when we moved to Silicon Valley {San Jose} in Northern California... and soon we will be moving again. :D I will stop by your blog and check it out :D
