Cuban Style Fried Rice




INGREDIENTS:

2 Cups of uncooked white rice
3 Eggs
4 Cups of water
1/2 Cup of chopped fresh scallions
1/4 Lb of thickly sliced ham
1/2 Lb of fresh bean sprouts
2/3 Cup of soy sauce
1 Can of sliced bamboo shoots

PREPARATION:

1.- Steam cook white rice with the 4 cups of water. While rice is cooking chop sliced ham into bite size pieces. Beat eggs and cook as if it were an omelet without adding any seasonings. When eggs are cooked cut into bite size pieces.


2.- When the rice is cooked set aside. Put a large and deep skillet or use a wok on medium heat and spray with cooking spray. Add scallions, bean sprouts, ham and bamboo shoots. Stir frying for 5 minutes.



3.- Add rice, eggs and stir fry all ingredients adding little by little the soy sauce for another 5 minutes.



Enjoy!

We like sprinkling some Tajin Seasonings Chili Powder on top it gives it a little kick!
