Spicy Tuna {recipe}

One of the items that you will always find in our pantry besides spices and Extra Virgin Olive Oil is canned tuna. It's convenient, easy to store and not to mention perfect for emergencies.

A couple of years ago I was taught this recipe with basics, but I've kind of made it my own with different spices and ingredients :D

INGREDIENTS:

1 - 2 Cans of tuna in water, drained
1 Tbsp of chopped or minced garlic
1 Tsp of crushed black pepper
2 Tbsp of Extra Virgin Olive Oil
1/2 Cup of chopped fresh green bell pepper
1/2 Cup of chopped onion
1 Can of El Pato sauce
Salt to taste


PREPARATION:



1.- In a large skillet on medium heat sauté onions, bell pepper and tuna in Extra Virgin Olive Oil along with garlic. Mixing all ingredients well.




2.- Sprinkle black pepper and mix all ingredients.



3.- Add El Pato sauce and set to low heat with a lid on. If you want to add salt, this is when you should add it.


Enjoy with some hot corn tortillas and a side of refried beans!

Carne asada tacos fresh!






Today being a holiday I decided to try out a different approach to cooking Carne Asada Baja style. Instead of using the grill I wanted to cook in the comfort of my own kitchen. Here is my take on preparing and enjoying tacos Baja style without leaving your home.

INGREDIENTS

1.5 lbs of  Beef cut into stir-fry pieces -I buy our at Vons it cost me $6.58 and it freshly packed every morning.
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder -can be substituted with garlic salt-
1/2 teaspoon onion powder
1 teaspoon soy sauce
2 key limes juiced without seeds

PREPARATION

1.- Place all the beef strips or pieces in a mixing bowl and add all the ingredients, mixing until all the juices are absorbed and spices are blended into each piece.

2.- Use a non-stick skillet sprayed with cooking spray such as PAM or the one of your choice and cook meat in it on medium heat for about 8 - 10 minutes, "stir-frying" occasionally.

3.- While the meat is cooking you can prepare the sides that will go with it and heat your tortillas!


...So next time you feel like eating some tacos but don't want to leave your home, just grab this recipe and enjoy! You can even have the kids help with the Guacamole and don't forget the Pico de Gallo Salsa
