Lavash Wraps





Ingredients:

Lavash Bread
Boneless Chicken breast tenders
Provolone cheese slices
Spinach
Avocado
Mayonaise
Chipotle Chile sauce




Preparation:

1.- Depending on the amount of wrap sandwiches you will be making {I made 2} use 1 tbsp of mayonnaise and 1 tbsp of chipotle sauce and mix using a fork. Combining both ingredients well. We'll call this spicy mayo sauce. Place a skillet on medium heat and cook chicken breast tenders with cooking spray using garlic, crushed black pepper and garlic salt.  

2.- Heat Lavash bread on a griddle on both sides for about 40 seconds each side, then spread the spicy mayo sauce mixture on the side that is up and place a slice of provolone on it so it melts a little. Add chicken breast and take off the heat.

3.- Place the Lavash bread on a plate, add spinach and avocado slices. Now roll into a "taco" shape and enjoy.

Brussels Sprouts




Yesterday I shared on my Facebook page that I had not tried Brussels Sprouts -ever! However 2 weeks ago I decided to buy some and figure out how to prepare them. I asked on Instagram how you had tried them and got some great ideas. Then I decided to experiment with them. Here is the first of 2 recipes I've loved so far with them. Oh and just so you know I've eaten them almost every day of the week of the past 2 weeks, yes loved them that much!






INGREDIENTS:

10 Brussels Sprouts
1 Tsp of minced garlic
Garlic Salt to taste
Crushed Black Pepper to taste
Cooking Spray


PREPARATION:

1.- Chop off the stem of each sprout and take the first layer off. Cut in half and set aside.

2.- Spray a medium sized skillet with cooking spray and place on medium-high heat. After a minute add minced garlic and brussels sprouts, sauté for about 2 minutes.

3.- Add spices and stir it all as if you were stir-frying for 4 minutes, cover with a lid and place on low-medium heat for another 3 minutes.


Enjoy!


Fun fact about Brussels Sprouts is the have the same chemical as Broccoli to help boost DNA repair and block growth of cancer cells. Also high in vitamin K!

Fireworks Tilapia






The SoCal Lady Bloggers are hosting a Pot Luck with delicious meals, drinks, appetizers and side dishes for you to prepare to celebrate Fourth of July this year. This year I wanted to prepare something different, I wanted to share a recipe that I just made up with ingredients I had in my home and I also wanted it to be healthy and using lots of vegetables. Not to mention easy. 



INGREDIENTS:

Tilapia Fillets {as many as you need, I used 3}
1 Medium sized Zucchini julienne cut
1 Large red bell pepper julienne cut
10 Grape tomatoes cut in half
1 Small Yellow Onion finely chopped
1 Tbsp of minced garlic
Garlic Salt to taste
Crushed Black Pepper to taste
Cooking Spray


PREPARATION:



1.- Place a large skillet on medium heat with cooking spray, in the meantime sprinkle garlic salt and crushed black pepper on each side of each fillet.


2.- Saute garlic and vegetables for about 5 minutes mixing constantly so they are evenly cooked. Spoon vegetables out of skillet and place in a bowl. 

3.- Cook tilapia 4 minutes on each side on medium heat. Add vegetables on top and let cook for another 3 minutes and serve!



We enjoyed ours with steamed brown rice and a side spinach salad as well as some fresh beets.
